Delicious Creamy Chestnut Soup
A tasty addition to the dinner table; Creamy Chestnut Soup , also know as velouté in French! It’s a simple puréed soup which is not only delicious but also easy to make.
500g (1lb) fresh chestnuts, or 2 x 200 gm packs whole peeled chestnuts
2 chicken or vegetable stock cubes
1 potato; peeled and grated
A bunch of herbs (bay, parsley and thyme)
4 tablespoons double cream
Chopped fresh parsley
Freshly ground black pepper
3 tablespoons unsalted butter
Boil chestnuts before using and peel them when cooled down. Keep your pan on low heat and melt butter. Then, stir in vegetables, grated potato, chicken, chestnuts and all the herbs. Add 1.25 liters water and boil all the ingredients for about 30 minutes. One can add cornflower only if the soup needs to be thickened, otherwise can skip it. Using a blender, blender the boiled ingredients and season well in the end with cream, black pepper and parsley.
