Soup of Tomato Basil
Served by itself or as a part of an Italian Festa, tomato-basil soup makes a delectable dish. A little extra virgin olive oil perfumes the soup adding a richness to each sip. This refreshing recipe can be taken hot or cold.

500 gms ripe red tomatoes; sliced
A bunch of basil stalks
5 tablespoons basil infused extra virgin olive oil
2 cloves garlic, sliced
1 tablespoon red wine vinegar
1 cup water
Add 2 tablespoons of basil infused extra virgin olive oil in a pan over medium heat.
Add the basil stalks and sliced garlic. Sauté for a few seconds.
Now add the sliced tomatoes. Add a cup of water, bring to boil and cook for 5 minutes.
Remove from heat, and add red wine vinegar.
Blend the Recipe gently with a hand blender to a smooth consistency.
Serve the soup in bowls. Add a swirl of basil infused extra virgin olive oil on the top.
