4 hard-boiled eggs
½ large avocado; chopped
50 g Lettuce
10 g Basil
20 g Black Olives
50 g Roasted Corn
30 g Roasted bell pepper
10 g Parmesan cheese; grated
2 g pepper powder
3 g Salt
1 g Chilli flakes
10 ml Lemon juice
20 ml Azafran Extra Virgin Olive oil infused with garlic
Combine eggs, avocado, lettuce, basil, olives, roasted corn, avocado, onion and cheese in a bowl.
Sprinkle salt, pepper, chilli flakes.
Whisk the olive oil, lemon juice and pepper.
Pour the dressing over salad and serve it on a bed of lettuce leaves or on your favourite cracker.
