Cheese Quesadilla & Sour Cream

One good excuse to eat lots of cheese! ‘Queso’ is Spanish for cheese. Zesty vegetables are a tasty delight when mixed with cheese. Fill it with veggies, cheese or chicken, a quesadilla is whatever you would like to make it with.

6 flour tortillas
1 cup cheese, grated (Sharp cheddar/Mozzarella/Monterey Jack)
1 cup onion, chopped
1 cup tomatoes, chopped
¼ cup bell pepper
Butter for toasting
Salt & pepper as required


Heat butter in a pan and saute the onion and bell peppers. Let it cool.
Add the tomatoes to it and keep aside.
Put the tortilla in a pan. Spread the butter and toast for a few seconds on each side.
Spread the vegetable mixture on one half of the tortilla. Add one tablespoon of cheese on the top of this mixture.
Fold the tortilla into half covering the mixture. Press it gently.
Flip the quesadilla and toast the other side till golden brown.
Slice and serve with tomato sauce and sour cream.

Some tasty filling combinations

Mushroom & zucchini with cilantro pesto
Corn & bean with avocado mango chipotle salsa
Fried eggplant, marinara sauce, mozzarella & Parmesan
Pulled chicken, buffalo sauce & blue cheese

For Sour cream


3/4 cup fresh cream
1½ tbsp lemon juice
Salt and to taste


Combine all the ingredients and whisk well.
Refregerate for 3 hours or till thick and serve.
