4 eggs

100 g cheese (Roquefort)

2 tbsp Azafran’s Grass fed Gir cow’s organic A2 ghee

2 shallots; thinly sliced

1 tsp curry powder

1 tsp Dijon mustard

Salt and pepper to taste


Melt the ghee over medium heat. Add the shallots and stir until they become soft. Add the curry power. Sprinkle little water to avoid the shallots from burning.

In a separate bowl, microwave the cheese until soft. Whisk in the eggs and Dijon mustard. Add this mixture to the shallots in the pan and cook slowly. Cheese will make them softer than normal.

Season with salt and pepper just before removing them from the pan.
