A quick, healthy salad bar staple that can be prepared in no time. Pairs well with grilled meats at a barbecue or on its own.

50 g Lettuce
100 g Cherry tomatoes
50 g Diced onion
100 g Diced cucumber
5 g Chives
10 g Olives
10 g Grated parmesan cheese
10 g Basil
10 ml Lime juice
20 ml Azafran’s Extra Virgin Olive oil infused with Basil
20 g Feta Cheese
2 g Pepper
Salt as per taste


In a large salad bowl, combine the onion, olives, lettuce, tomatoes, cucumber, chives, basil, feta cheese and parmesan cheese.

Whisk the olive oil, lime juice and black pepper.

Pour the dressing over salad, toss and serve.
