Middle Eastern Hummus with Pita Bread

A chickpea-based dip with the right balance of flavours. This Middle Eastern delight can be taken as breakfast or as a starter to kick-off lunch or dinner Hummus. This recipe is a proof that some of the best-tasting dishes in life are very simple to make!

Ingredients For Hummus :

3 cups chickpeas soaked overnight and cooked till soft

¾ cup tahini paste

½ cup garlic-infused extra-virgin olive oil (or 1 clove garlic; minced)

1 teaspoon cumin powder

¼ cup freshly squeezed lemon juice

1 tablespoon extra-virgin olive oil for drizzling

Water and salt as required

1 teaspoon chopped parsley leaves for garnishing

Preparation For Hummus :

Drain water from the cooked chickpeas, and take it in a blender.

Add little water with ½ cup olive oil in the blender and mash it into a smooth consistency.

Add the tahini paste, lemon juice, garlic, cumin powder, salt and blend for a few seconds.

Take the hummus in a bowl. Make a shallow well and drizzle the olive oil.

Garnish with chopped parsley leaves, and serve it with warm pita bread.

Cooking time: 30 minutes

Our kitchen tips

  • Do not use canned beans. Soak and cook your chickpeas, and cook till they are very soft.
  • While mashing the chickpeas, use the water used for boiling the chickpeas instead of plain water. A flavour booster!
  • Peel the chickpeas to avoid the peels showing here and there in the finished hummus. This will also give a silky; cream like texture.
