Paneer Kheer

Conventional definition of Kheer suggests mixing rice in milk makes the most loved Indian dessert, Kheer. Little did anyone know that Kheer can be a versatile dish which can be made with Paneer as well. Yes, paneer! Paneer being the favorite among both children and adults, without any doubt Paneer Kheer will top the dessert chart in every house.

It can be also made with Chenna. Chenna and paneer are almost the same, just that chenna is coagulated milk and paneer is the settled coagulated milk. Almost all Bengali sweets would have chenna as their main ingredient.

Time to get your tummy some yummy paneer kheer…!

1 cup milk

1/4 cup Paneer; grated or Channa; crumbled

1 tablespoon almond; chopped

1 tablespoon pistachios; chopped

1 tablespoon cashews; chopped

1 deseeded date; chopped

1/2 teaspoon cardamom powder

1/2 teaspoon rosewater

1 teaspoon saffron

Sugar, as required


Take a wide bottomed pan and pour milk in it.

Keep it on the stove and heat it on low flame. Let it come to boil and once it does, simmer the milk until it is thick. Keep stirring it at regular intervals and then add some sugar.

Continue boiling it for another 2 minutes and then add chopped almonds, pistachios, cashews and date to the milk. Then add cardamom powder and saffron in it. Mix it well and let it simmer.

Now, grate the paneer and add it to the milk. It can be replaced by crumbled chenna as well. Let the paneer/channa cook well for 5 minutes and then turn off the stove.

Let it sit for 2 minutes and rosewater on it in the end. Rosewater will give amazing fragrance and sweet taste.

The paneer kheer is ready! One can have it all by itself or with pooris!
