Thai Tom Yum Soup

 Tom Yum Soup This is the most famous among Thai soups. A flavorful spicy – sour combination; the soup has immune boosting abilities, and is a natural remedy for cold and flu. Make this soup for a winter weekend party, and more people will be showing up at your house in the next two days

Ingredients

4 cups chicken stock
4 shrimps
¼ cup of Shiitake mushrooms, sliced thinly
1 Bell pepper (green or red) sliced thinly
3 garlic cloves; minced
1 small ripe tomato, cut into wedges
1 red shallot; cut into wedges
2 red chilies; minced
3 fresh galangal root; sliced
1 stalk of lemongrass; minced
2 tablespoon fish sauce
2 tablespoons Thai roasted chili paste (Nam Prik Pao)
3 kaffir lime leaves
Coriander leaves for garnishing
Salt as required

Preparation

In a saucepan, heat the chicken stock.
Add the shallots, lemongrass, and galangal root and simmer for two minutes.
Now add the salt, mushrooms, tomatoes, red chilies, garlic cloves, and bell pepper.
Add the shrimps and Nam Prik Pao. Boil until the shrimps are completely cooked.
Add the kaffir lime leaves.
Season with the fish sauce.
Garnish with coriander leaves and serve piping hot.
